Ever wondered what the pilgrims ate at Thanksgiving? Make squash like the pilgrims did, who also learned it from the Native Americans which had been here hundreds of years prior. Upon settling, the pilgrims quickly realized they might starve because the seeds they brought with them across the ocean were not growing well in North American soil. the indians taught the pilgrims how to plant seeds more efficiently. They would plant beans and squash in between the corn stalks so that a farmer may harvest five times more on the same sized of land in Europe.
Here is a squash recipe prepared in a way like the pilgrims learned. It reminds me of sweet yams a little. I like this recipe because it has history, it is simple to prepare and because tastes naturally delicious. Oh, yes, they also ate turkey, geese, wild duck, cornbread (corn was new to them), plenty of nuts and fruit like berries and plums!

Sweet and Buttery Squash


Preheat oven to 375.
Wash and cut a butternut squash (lengthwise), place on a baking pan and cover with foil.
Bake for 1 hour until brown.
Garnish with butter and maple syrup (or honey, or sugar: white or brown ).

That's all!!!














  




Leftovers make a great soup! For soup, place squash (without skins) in blender, add milk or
cream and blend until smooth. Heat over stovetop in saucepan.
Tip: Steaming the squash will make removing the skins easier : )
